Where the truffle actually comes from
Spain is the world’s largest producer of black truffle, at roughly 120 tonnes a year against 40 tonnes in France and 30 in Italy. The province of Teruel accounts for about 80 per cent of world production, and the village of Sarrión for some 80 per cent of Teruel’s.
Around 90 per cent of that Spanish harvest is exported to France, because Spain has very little processing capacity of its own. It is graded, packed and re-sold from there. A large share of the black truffle sold in Europe as French was lifted in Teruel.
Buying here removes that step. You are dealing with the grower, at the point where the truffle comes out of the ground, which means fewer days between harvest and delivery — and in fresh truffle, days are aroma.
Grades and what each one is for

First grade is the one worth asking about. It carries the same aroma as Extra and costs less — the difference is cosmetic, and for anything sliced, grated or cooked it makes no difference on the plate.

Trade buyers source ahead of the retail rush: enquiries for wholesale black truffle peak in October, while consumer demand peaks in December. If you are planning a December menu or a Christmas retail line, October is when the conversation needs to happen.

Fresh truffle is perishable and its window is measured in days, so the cold chain is the part of this that actually decides whether the product arrives worth eating.

Outside the December-to-March window, and for anything that does not need to arrive whole, the same harvest is available as peelings, pieces, frozen and canned product — no cold chain, no shrinkage.
Questions we get from trade buyers
Is this the same species as French black truffle?
Yes. Tuber melanosporum is a single species. What is sold as Périgord truffle in France, Trufa negra in Spain and Tartufo nero pregiato in Italy is the same fungus. Origin affects price and freshness, not species.
Can you supply outside the winter season?
Partly. Tuber melanosporum runs December to March. From May to August there is summer truffle, Tuber aestivum, which is a different species with a milder aroma and a much lower price. Preserved formats cover the rest of the year.
What is the difference between pieces and peelings?
Pieces are broken truffles of good maturity, sold by weight. Peelings are the trimmings left after peeling whole truffles. Both carry the aroma; both are used where appearance does not matter.
Do you ship outside the European Union?
