Black Truffle Delivery from the Grower

Black truffle delivery from this site means one thing: fresh Tuber melanosporum, lifted in Teruel, weighed piece by piece and sent to you cold.

A fresh piece is perishable, so the order is not a parcel of dry goods. Where it can go, and when it should leave, are agreed before anything is packed.

This page describes that process, from the request to the box.

Black truffle delivery: a whole piece wrapped in paper and placed in an insulated box before dispatch
This page is about the fresh black truffle, Tuber melanosporum, the fungus. It is not about chocolate truffles.

What is settled before a delivery leaves Teruel

Three things, in this order, and none of them after payment.

How a black truffle delivery is packed

The piece travels ready to use, wrapped in paper so that it neither sweats nor dries out.

The cold travels inside the box, with the truffle: a waterproof insulated polystyrene box, which is what keeps the chain unbroken on the way. It is the same packing a trade order by the kilo goes out in; only the size of the box changes.

Refrigerated transport is an option on top rather than the standard. It costs more, and it is arranged separately for anyone who wants it.

How long it keeps, and how to store it

Counting from the moment it comes out of the ground, a well kept piece holds for about fifteen to twenty days. The grower’s advice is not to push it that far: ten to fifteen days is where a fresh truffle is worth eating.

Keep it in the fridge, always. Left out at room temperature it goes off far faster.

His method is a glass jar with a sheet of kitchen paper. The truffle gives off moisture as the days pass, the paper holds it, and you change that paper periodically as it dampens.

While it waits there it can work for you: eggs in their shells, pasta or rice shut in the same jar take on the aroma. Half a dozen to a dozen eggs around the truffle, closed, twenty-four to forty-eight hours in the fridge, and the porous shell does the rest — then still grate truffle over the plate, because the infusion flavours the dish, it does not replace the truffle in it.

Why cold decides more than speed

The aroma of a black truffle fades a little every day from the moment it leaves the ground. Cold slows that down; heat and damp speed it up.

That is why the box is insulated, and why the dispatch date is matched to your delivery date rather than sent as early as possible and left waiting.

Delivery inside and outside Europe

Within the European Union the piece travels as fresh produce. Outside it, rules vary by country, and some destinations are not possible for fresh black truffle at all.

We do not promise a destination we have not checked. If fresh delivery to your address is not possible, the preserved and frozen formats on the wholesale pages travel without those constraints.

Delivery runs only during the season

Fresh black truffle exists from December to April, so deliveries are only possible in those months. December is when demand is highest and dispatch dates fill first.

Do you deliver fresh black truffle to the United States?

The destination is confirmed at the time of ordering, before anything ships. Fresh food rules differ by country, and we do not promise a route we have not checked for your address.

How long does a fresh black truffle keep once it arrives?

Ten to fifteen days is the recommendation, and up to fifteen or twenty if it is well kept — counted from the day it left the ground, not from the day the box arrives. Keep it in a closed glass jar in the fridge, on kitchen paper you change periodically.

How long does delivery take?

It depends on the destination, and it is confirmed with the dispatch date when the order is agreed, so the piece arrives close to when you will use it.
