Fresh Black Truffle, in Season December to April

Fresh black truffle is sold here as whole pieces of Tuber melanosporum, lifted in Teruel and sent as they came out of the ground: no jar, no oil, no flavouring.

The window is short. It runs about four months, from December to April, and that window is the whole business.

Every piece is weighed and confirmed with you before payment, so the weight you pay for is the weight that arrives.

This page is about the fresh black truffle, Tuber melanosporum, the fungus. It is not about chocolate truffles.

What a fresh black truffle order contains

A whole piece of Tuber melanosporum from the week’s harvest, ready to use, with its grade stated.

The weight you ask for is a guide, not a cut. No piece is sliced to make an order come out even: it is completed with the next one — always of the grade you bought, never a mix — and the final weight is agreed before you pay.

How much fresh black truffle to order

Most orders placed at a distance start from a budget rather than a weight: people say what they want to spend, and that figure decides whether it comes out as one piece or two.

A household order usually lands between 50 and 100 grams. Some are 150, some a little under 50. What does not happen is mixing grades to reach a number.

Four fresh months, and what happens the other eight

The fresh campaign runs from December to April, and that seasonality is the strength of the product and its limit at once.

Outside those months there is no fresh Spanish black truffle. What keeps all year are the preserved and frozen formats, made in season from the same harvest.

Which grade of fresh black truffle to buy for what you cook

Extra is the regular, globose piece, firm to the touch and free of surface damage, between 20 and 60 grams. It is the grade a restaurant puts on the counter, and the one that costs most.

First has small defects of shape, colour or skin that do not affect the quality of the piece. Second’s are more marked, and it may be slightly touched by rot or by the beetle. The restaurant that displays Extra cooks with both, because in a sauce or over eggs none of that is visible.

Grating it at home, First or Second is the sensible purchase: you pay for aroma, not for looks.

How to order fresh black truffle for a date

Send the grade, the approximate weight and the day you need it. We reply with the pieces available that week, their real weight and the price, and only then is anything paid.

The destination is confirmed at the same time: fresh black truffle is perishable, so the route is agreed before anything leaves Teruel.

The pages people usually read before ordering:

Can I buy fresh black truffle outside the season?

Not from Spain. Fresh Tuber melanosporum is harvested from December to April. The rest of the year the same harvest is available preserved or frozen.

Does it arrive washed?

It arrives ready to use. If you want to go over it, do that just before cooking, under the tap with a soft brush — a wet truffle spoils faster. Trade buyers can ask for it the other way round, unwashed and unbrushed as it comes off the plot.

What if the piece weighs more than I asked for?

You are told the real weight before paying and decide then. Nothing is charged that you have not agreed to.
